Gideon’s Bakehouse Releases Cookie of the Month
Gideon’s Bakehouse is one of the most popular dessert spots at Disney Springs. The well-known bakery is known for its massive, nearly half-pound cookies and cake slices, all set within a Victorian-themed atmosphere. Gideon’s stands out not just for its popular cookies but also for the theme of the bakery. The owner, Steve Lewis, created original characters and stories that appear in the shop, on merchandise, and in the monthly cookie releases.

The giant cookies, which take over 24 hours to make, along with the rotating monthly specials, cake slices, and cold brews, have helped create a devoted following that often results in long lines and virtual queues. It’s not uncommon to see large lines outside the popular bakery. The atmosphere of the bakery is also part of the appeal, which is Victorian-era inspired with dark wood paneling, antique furniture, and stained glass windows. It’s like a cross between an old Gothic library and a bakery.
We just happened to be at Disney Springs for the release day of the June monthly cookie release and waited for over an hour to be one of the first to try the seasonal cookie. June’s limited edition flavor is the Cookie Butter Butterscotch Cookie. These releases take place each month, and opting to try the monthly limited edition flavor is always a fun choice when visiting Gideon’s Bakehouse.
We tried the Cookie Butter Butterscotch Cookie, and it was deliciously sweet. We especially loved the butterscotch chips! This is a great seasonal cookie to try, but we also recommend opting for one of their delicious cold brews to go along with it.

Don’t let the lines outside Gideon’s Bakehouse stop you! The cookies and coffees at this bakery are worth the wait. If you want to avoid the longest lines, go during the day rather than in the evening. In the evening, especially around dinner time, is when lines tend to be the longest.
